Instructions

  1. Whisk together eggs, milk, vanilla, and cinnamon in a shallow bowl until well combined.

  3. Dip each bread slice into the egg mixture, turning to coat both sides. Let it soak for 5-10 seconds per side to absorb the custard.

Notes

Bread choice

Use soft white bread with less than 2g fiber per slice. Look for enriched white bread, brioche, or challah. Avoid whole grain, seeded, or multigrain breads which are too high in fiber for flares.

Dairy-free option

Swap butter for coconut oil or olive oil, and use almond milk or oat milk instead of lactose-free milk. Both options are equally gentle on the gut and maintain the same soft texture.

Toppings

Maple syrup and honey are both safe toppings. During flares, skip fresh berries and stick to smooth applesauce or a light dusting of powdered sugar. SCD followers should use honey only (maple syrup is not SCD-legal).

Storage

French toast is best eaten fresh. Leftovers can be refrigerated in an airtight container for up to 2 days. Reheat gently in a toaster or warm skillet over low heat to prevent drying out.

Make-ahead

You can prepare the egg mixture the night before and store it covered in the fridge. Give it a quick whisk before dipping bread in the morning.
