Instructions
Grease a 9x13-inch baking dish with butter or line it with parchment paper for easy removal.
Equipment: 9x13-inch baking dish, parchment paperMelt the butter in a large pot over low heat, swirling occasionally until fully liquefied.
Equipment: large pot, wooden spoonAdd the marshmallows to the melted butter and stir constantly with a wooden spoon until completely smooth and no white streaks remain, about 3-4 minutes.
Tip: Low heat is critical—marshmallows scorched over high heat become tough and stringyRemove the pot from heat immediately to prevent the marshmallows from becoming tough.
Stir in the salt and vanilla extract (if using) until evenly distributed throughout the marshmallow mixture.
Add all 6 cups of crispy rice cereal at once and fold quickly with the spoon, scraping from the bottom, until every piece is coated in marshmallow.
Tip: Work quickly while the mixture is still warm and pliableTransfer the mixture to the prepared baking dish while it's still warm.
Press the mixture gently into an even layer using a buttered spatula or lightly greased hands.
Equipment: buttered spatulaTip: Avoid pressing too firmly or the treats will turn out dense and hardLet the treats cool at room temperature for about 30 minutes, until fully set and no longer warm to the touch.
Cut into 12 squares using a sharp knife.

Notes
Storage
Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week. Treats become slightly firmer when chilled but soften at room temperature. Not recommended for freezing as texture degrades.
Dairy-free option
Substitute the butter with coconut oil or vegan butter for an equally soft, binding result. Coconut oil adds a subtle tropical note that many of us tolerate well.
Gluten-free verification
Original Rice Krispies contain malt flavoring from barley and are NOT gluten-free. Look for certified gluten-free rice cereal brands (Nature's Path, Barbara's) if you need to avoid gluten.
Portion control
These are calorie-dense and easy to overeat. Pre-cutting into 12 squares helps with mindful portioning—especially useful when managing IBD symptoms and tracking dietary intake.
